Holly's Secret Sourthern "Cheese Crispies"

These Cheese Crispies were made in the “dollop-style,” not perfectly rolled into little balls!

My Cheese Crispies are the perfect nibble to offer your guests upon arrival for cocktail hour. They are my signature hors d’oeuvre!  Not only are they delicious, but they are also easy to make, store well in the refrigerator, and freeze well. They never fail to garner oodles of compliments! 

This recipe is simple to remember:

1 cup + 1 cup + 1 cup + 1 stick of butter = only four ingredients 

(Add a few dashes of red pepper flakes, too)

You can make them ahead of time and either keep them in an airtight container in the refrigerator (they keep for a month) or place them in a Ziploc baggie and freeze them! 

You may reheat them in the oven, just long enough to be warm, but they are also delicious cold. Are you in a pinch for time, or do you have friends dropping in for an impromptu drink? Pull them out of the refrigerator and microwave for 30 seconds to quickly warm them. 

Holly’s Secret Southern “Cheese Crispies”

Heat oven to 350 degrees 

1 cup (filled up) sharp cheddar cheese at room temperature

1 cup all-purpose flour

1 stick of salted butter- softened

1 cup rice crispies 

Add a pinch of salt (optional) and a generous sprinkle of red pepper flakes.

Step 1: Mix everything in a food processor until a soft ball forms, except for the rice crispies. 

Step 2: Add a pinch of salt. Sprinkle in red pepper flakes to give as much “kick” as you desire!

Step 3: Pulse in the rice crispies until mixed in the dough. (You want the rice crispies to remain semi-crunchy!) 

Form the dough into teaspoon-sized balls or dollop a teaspoon-sized amount onto the greased cookie sheet. They can be placed ½” apart, as they don’t spread out. 

Sprinkle a little more red pepper flakes on top before baking. You can decide how spicy you want them! 

Bake at 350 degrees for about 8-14 minutes, until lightly browned.  

This makes about 24-30 balls, depending on the size. Serve warm, preferably.  

Note: Why not make two batches at a time while you're at it? Then, you’ll have some “inventory on hand” to serve at a moment's notice. 

These cheese crispies were rolled into little balls instead of dollops, but my mouse loves them either way!
